Caviar Kaspia dates its Paris beginnings to 1927. Today, the city offers far more than a restaurant table: a guided tasting at a caviar house, roe alongside cocktails in a hotel bar, or a counter where you can eat without committing to a full meal. Choose the experience first. Then ask which fish produced the roe, where it was farmed and how it will arrive.

Why Paris matters

Paris's caviar houses built dining traditions as well as retail businesses. For a visitor, that means several distinct ways to encounter the same ingredient: a specialist restaurant for a meal, an appointment-led workshop for guided comparison, or a bar for caviar alongside cocktails. That range is part of the wider story of French caviar culture.

Caviar bars in Paris, by district

Start with the format: a restaurant offers a different visit from a guided tasting space, and a shop address alone does not promise somewhere to sit and eat. District means arrondissement, the numbered Paris administrative district. The table moves through the city geographically, not in order of merit.

Choose the kind of visit

A caviar house restaurant

For a meal built around Petrossian's products, head to its restaurant at 13 boulevard de la Tour-Maubourg. This is a restaurant in its own right, rather than a table inside the historic shop nearby. The house's official site describes a seafood-focused menu of caviar, smoked salmon and other fish roe.

For Caviar Kaspia, look to Madeleine. Its official Paris page identifies that restaurant and offers direct reservations; it confirms the Paris dining destination, not the arrangements at every Kaspia-branded address. The separate Caviar Kaspia profile explores the house itself, rather than the practical business of choosing a Paris table.

A boutique or tasting counter

Want a guided comparison, with room to ask questions? Book Kaviari's Manufacture at 13 rue de l'Arsenal. Its advertised caviar workshops run by appointment, so reserve the particular workshop rather than planning an impromptu restaurant lunch or simply arranging a shop visit.

The Delikatessens are a different proposition. Kaviari describes them as grocery shops with tasting counters and food to eat on site, rather than dedicated caviar workshops. Ask the individual branch whether it offers the caviar service you want; do not assume every counter has the same menu.

A bar, brasserie or seafood restaurant

Prunier at 16 avenue Victor Hugo gives you two formats: a seafood restaurant and a separately described bar. Its current venue site lists French classics, grilled fish, seafood and Prunier caviars. Choose it for a broader meal or the bar format; caviar service is a feature of this address, not something to assume of every Paris brasserie.

The address matters. Prunier's house directory records that restaurant activity moved from Madeleine to Victor Hugo in June 2023. Older listings for a Madeleine dining room are therefore the wrong basis for planning a meal.

A hotel bar

For caviar alongside cocktails, Les Ambassadeurs at Hôtel de Crillon offers a published selection. The menu names Maison Kaviari as supplier and lists origin countries. The hotel runs the bar; Kaviari supplies the caviar.

Do not expect a decorative serving bowl to carry the information available on the labelled tin.

Keep those roles separate elsewhere, too. A Prunier-branded dining room does not establish the restaurant's current corporate ownership. This guide identifies the venue and its advertised caviar without inferring farm ownership or production origin from the name over the door.

What to look for before ordering

Species and farming origin

Ask two direct questions: what is the scientific species name, and in which country did the roe originate? These are especially useful when a menu gives only a house selection name. For a hybrid, ask which two fish were crossed. A French brand name or Paris address is not an answer to the farming-origin question.

Next, establish what you are ordering: a measured portion of caviar on its own, or a dish garnished with it. Ask for the weight in grams and the included accompaniments. A tasting, a shared tin and a plated dish are different experiences, and a clear answer makes them easier to compare.

A genuine geographical claim

Caviar d'Aquitaine is a protected geographical indication, not a loose description of French caviar. Commission Implementing Regulation (EU) 2025/342 registered the name, with publication on 18 February 2025. If a menu makes that claim, ask to see the corresponding product identification and PGI mark, known in French as IGP.

The published specification permits Acipenser baerii baerii, rather than every farmed sturgeon species.Product-specific confirmation is needed before identifying any serving at the venues here as a PGI product.

The tin and cold service

Find out how the caviar reaches the table: in its original retail tin, in a labelled repacked tin, or as a portion plated in the kitchen. Repacking alone is no reason to reject it. What matters is whether staff can connect your serving to the product's identity and origin.

A CITES label provides traceability information rather than independent verification of the contents. If provenance guides your choice and the caviar has been decanted, ask to see the source container. Do not expect a decorative serving bowl to carry the information available on the labelled tin.

For plain caviar, request a chilled presentation with accompaniments served separately. Taste a little on its own first. Ice is a serving aid, not evidence of correct storage. For a warm dish, ask how the caviar is added rather than assuming it has been cooked.

Booking and French service habits

Match the booking to the service you want:

  • Petrossian: Tuesday to Saturday lunch and dinner; reserve through its restaurant site.
  • Prunier: daily restaurant service; the bar opens from noon until 02:00.
  • Les Ambassadeurs: daily from 17:00 until 01:00; no reservations.
  • Caviar Kaspia: use the restaurant's direct booking contact.
  • Kaviari: reserve the particular workshop in advance.

These are the venues' published arrangements. When confirming a visit, specify a caviar tasting, bar seating or a full meal. Ask whether that particular service will be available at your chosen time; the building can be open while a menu is unavailable.

There is no compulsory French caviar ritual. Choose plain roe, accompaniments or a composed dish according to what you want to taste. For the background to blinis, cream and Champagne at the table, read French service habits. At the restaurant, ask about its own presentation rather than trying to follow a supposed national rule.

Taking caviar home from France

Your route determines the rules. Moving a lawful purchase between EU member states is different from crossing the EU's external wildlife-trade border. Keep the labelled container and purchase record.

For travel to Great Britain, APHA guidance allows a conditional personal-luggage exemption of up to 125 g per person in individually marked containers. Northern Ireland follows a different border framework. US rules also provide a conditional 125 g personal effects exemption, but this does not override Endangered Species Act restrictions, including those affecting beluga. Switzerland's FSVO gives a maximum of 125 g per person without CITES permits; allowances cannot be combined.

These exemptions concern eligible Appendix II caviar for personal use, in individually marked containers bearing CITES labels. They do not cover Appendix I species, and destination food, biosecurity and declaration rules still apply.

Before buying, check the 125 g travel exemption against your route, including any transit. Arrange transport that follows the producer's storage instructions, so the journey home respects the caviar as well as the border rules.
