Who makes Antonius Caviar?
The distinction between the brand and its manufacturing company matters here. Antonius identifies Gosławice as the owner of the brand, while its published terms name Olsztyn II as the business producing the goods for Gosławice. This is a farming and processing operation, not simply a label attached to unspecified imported roe.
The company's legal disclosures give the full operator name as Gospodarstwo Rybackie “Gosławice” spółka z ograniczoną odpowiedzialnością, a Polish limited liability company. They supply KRS number 0000019417, matching the company record reproduced by Rejestr.io, which gives a registration date of 12 June 2001. That date concerns the corporate entity, not the launch of Antonius Caviar.
Antonius describes itself as a family business and says its name honours Antoni Łakomiak. According to Rejestr.io, Antoni Eugeniusz Łakomiak holds 90 per cent of Gosławice's shares. For the broader distinction between farmers, processors and brand owners, see caviar houses and producers.
From sturgeon farming to a caviar brand
Gosławice dates its sturgeon breeding to 1992. Its historical account records the purchase of Siberian and Russian sturgeon stocking material from Poland's Inland Fisheries Institute in 2001, followed by artificial reproduction from 2005. The farm says it initially supplied mature females to other European caviar producers.
The next step was processing its own production. Gosławice reports acquiring a majority stake in Olsztyn II in 2012, bringing an existing fish-processing facility at Ruś into the group. Its account connects the subsequent rebuilding of that facility with the development of Antonius Caviar.
The current brand history gives 2014 as its establishment year. A Polish ministry report of a company presentation instead associates the new production line and brand with 2013. The company dates the brand to 2014; the ministry report associates its creation with 2013.
Where the fish are farmed
The documented network has three Polish locations: Gosławice in Konin, Lubicz near Toruń and Ruś near Olsztyn. A November 2018 government meeting record gives the group's description of Gosławice as a breeding centre for Russian and Siberian sturgeon, Lubicz as principally raising Russian sturgeon, and Ruś as raising both species and producing caviar.
The brand's own legal notices identify Gospodarstwo Rybackie Lubicz sp. z o.o. and Gospodarstwo Rybackie Olsztyn II sp. z o.o. as subsidiaries. Its manufacturing terms locate the caviar producer at Ruś, while the public CITES register gives Olsztyn II's address as Ruś 97. Konin is therefore not a substitute address for every stage of production.
Antonius says its roe comes exclusively from fish raised on its own farms. This is the producer's own sourcing statement. The confirmed Polish locations place this house within Polish caviar, rather than making Poland merely the nationality of its branding.
Which species Antonius Caviar uses
The two established lines map clearly to species. Siberian is Acipenser baerii, the Siberian sturgeon; Oscietra is Acipenser gueldenstaedtii, the Russian sturgeon. Both mappings appear in the company's material and in the Polish ministry's account of production at Olsztyn II. Here, “Russian” identifies the fish, not the country where it was farmed.
Oscietra is a trade name, not a species name or a legal grade. The scientific name identifies the species used for this line.
What it is known for
Antonius presents itself as a breeder-led producer, with control extending from fish husbandry to finished caviar. Its account emphasises three farms with different water conditions, manual preparation and malossol, meaning lightly salted. It describes its established production as unpasteurised, using unovulated eggs, meaning eggs collected before ovulation.
Water and heritage need to be read with the same precision. Gosławice's history describes using water warmed by a power station during sturgeon rearing; the brand also stresses the differing environments of its farms.
Gosławice's history describes using water warmed by a power station during sturgeon rearing; the brand also stresses the differing environments of its farms.
For flavour, the company's own descriptions distinguish Siberian by a pronounced, lingering finish and Oscietra by nut-like notes and a milder finish. These are the producer's tasting descriptions. They are useful as the house's intended distinction between the lines, rather than a promise about an individual tin.
Registration and the information on a tin
The public CITES register lists Gosławice under 0004 and Olsztyn II under 0009, both with exporter and processing/repackaging marked “Yes”. These are operation entries, not registrations of the Antonius brand itself. The table combines processing and repackaging in one field, so it should not be read as a detailed map of each facility's activities.
Under the EU caviar labelling system, a primary container label identifies the species code, source, country of origin, year, plant and lot. On a repacked tin, distinguish the country of origin from the repacking plant: an overseas repacker does not change the roe's origin. Read country of origin versus country of repacking for that distinction, and checking a producer on the CITES register to match the operation rather than the brand name.
A CITES label supplies traceability information, not independent proof of the contents. The relevant legal frameworks also distinguish wildlife-trade marking from the rules governing food names and misleading presentation.
| Jurisdiction | Relevant framework | What it means here |
|---|---|---|
| Poland and the EU | Regulation (EC) No 865/2006, Article 66 | Sturgeon caviar primary containers are subject to marking requirements; the article also addresses licensing of processing and repackaging operations. |
| Great Britain | Assimilated Regulation (EC) No 865/2006, Article 66 | The GB text retains caviar marking and operation-licensing provisions. |
| Northern Ireland | EU wildlife-trade framework | Do not substitute the GB text for the applicable EU rules. |
| United States | 50 CFR 23.71; FDA CPG 540.150 | International-trade marking rules are separate from FDA's nonbinding guidance on naming salted sturgeon roe “caviar”. |
These summaries concern marking and naming, not a general permission to import Antonius products. US FDA naming guidance says unqualified caviar should be salted sturgeon roe; for other fish, all naming words should have substantially equal type size and prominence. FDA guidance also calls for ingredient declarations, compliant colour additives and prominent disclosure of artificial colour.
For retail food information in Great Britain, GOV.UK guidance says provenance must be stated where packaging could otherwise mislead consumers about origin. A business address is not necessarily the origin of the roe, and customs classifications do not replace consumer information requirements.
