Thesauri Caviar is a Greek brand associated with a sturgeon farming and processing operation near Arta. According to Thesauri, its caviar comes from sturgeon raised on its own farm. Its website names Varvakis Caviar IKE as the seller and LAKY SA as website operator. An indexed CITES record also names LAKY SA.

Who is behind Thesauri Caviar?
The legal names matter because a brand, a seller and a registered processing operation need not be the same entity. For the wider context, see caviar houses and producers. Thesauri's shipping and payment page names Varvakis Caviar IKE, gives Greek tax number 801003733 and places the seller in Mitikas, Preveza.
The same website's terms instead identify LAKY SA as its owner and operator. Its privacy policy, effective from 30 November 2020, also names LAKY SA and gives an Arta address, which matches the address in the CITES entry.
A commercial reproduction of Greek registry data lists VARVAKIS CAVIAR ΙΚΕ under GEMI number 146748449000, with incorporation on 21 June 2018. GEMI is the official source for company filings and management information.
GEMI is Greece's General Commercial Registry, whose public service provides incorporation, management and filing information. For the broader distinction between business roles, see farmers, processors, repackers and brands.
A farm, not just a label
There is published evidence of a real production operation behind the brand. Gastronomos reported from Psathotopi in an article first published in December 2018, naming Nikos Papagiannis and production manager Kostas Karipoglou and describing fish checks, roe preparation, salting and packing.
The company's account places its facilities by the Amvrakikos Gulf and says its caviar comes from sturgeon raised in its own aquafarm. The reporting therefore supports describing Thesauri as a producer-linked brand rather than treating it as a retailer with no demonstrated farming connection.
That describes the operation, not a verified corporate structure. A farm visit and a brand website do not establish which legal entity owns the land, the fish, the processing assets or the trademark, so those assets should not automatically be assigned to either company named above.
The available production account is Greek, while the historical Russian connection concerns the introduction of sturgeon stock, not evidence that today's tins contain roe harvested in Russia.
The dates behind the brand
Thesauri dates the start of its sturgeon project to 1992, saying it brought eggs from Astrakhan to Greece. Its account invokes the eighteenth-century merchant Ioannis Varvakis as inspiration; that is a company heritage narrative, not a claim of continuous corporate descent from his business.
Gastronomos gives a more differentiated chronology: the family's aquaculture activity began in 1990, sturgeon arrived in 1992, the first caviar was produced in March 2001, and the Thesauri name appeared in the Greek market in 2017. Its account describes the 1992 imports as juvenile fish rather than eggs.
The 1992 date marks the start of the sturgeon project, according to Thesauri.
Which species does Thesauri name?
An indexed company page associates Ossetra with Russian sturgeon, Acipenser gueldenstaedtii; Baerii with Siberian sturgeon, Acipenser baerii; and Beluga with the species CITES lists as Huso huso.
Thesauri also says it uses pure species rather than hybrids. This is the producer's description of its stock, not an independent genetic assessment or a comparison with other farms.
For a particular container, match the stated species to the species information in its traceability documentation. A broad range description tells you what the company presents, but does not authenticate the contents of an individual lot.
What it is known for
The documented distinction is its Greek farming connection and its presentation of Russian, Siberian and beluga sturgeon within one producer's range. A Greek public export-promotion brochure also lists the business as LAKY S.A. THESAURI CAVIAR, providing another public link between that company and the brand.
What the CITES record establishes
An indexed CITES record names LAKY S.A. at 16 Philellinon Street, Arta, with the codes GR RHEX 00001 and GR RH B 00001. The entry lists LAKY S.A. as an exporter and processing or repackaging operation.
This is a registration record, not a product award or a guarantee of every statement made by the brand. CITES Resolution Conf. 12.7 remains Rev. CoP17 in the Secretariat's post-CoP20 index; its subject is conservation and trade in sturgeons and paddlefish.
Greece's central CITES Management Authority sits within the Ministry of Environment and Energy. The ministry identifies Joint Ministerial Decision 125188/246/22 January 2013 as the national implementation measure and explains that CITES documents are separate from other health and customs documentation.
When checking a supplier, look up the registered legal entity rather than relying on the front-of-pack brand. The guide to checking a producer on the CITES register explains why plant registration, farm ownership and a retailer's identity are different questions.
Origin and repacking on the label
A CITES caviar label separates the country of origin from the identification of a repackaging plant. A Greek brand name, an Arta office address or a Greek repacker therefore cannot, by itself, establish that the roe was produced in Greece.
For Thesauri, the farm account supplies the general production story; the individual container and its linked records must supply the lot-specific provenance.
The international label is a traceability mechanism, not proof of what is inside the container. Read country of origin versus country of repacking for that distinction; the European Commission's wildlife-trade reference guide explains the EU marking framework, while US implementation is addressed in 50 CFR 23.71.
A Greek brand name, an Arta office address or a Greek repacker therefore cannot, by itself, establish that the roe was produced in Greece.
UK government guidance refers to caviar containers individually marked under Article 66(6).
Beluga requires a separate US check
Greek production does not automatically make beluga eligible for entry into the United States. Under 50 CFR 17.44(y)(5), qualifying aquaculture facilities outside the listed littoral states may receive individual exemptions from threatened-species permit requirements, subject to specified conditions; Greek origin alone is not that exemption.
Under US rules, aquaculture exemptions are specific to individual facilities and do not remove applicable CITES requirements.
FDA's nonbinding guidance recommends unqualified caviar for salted sturgeon roe; other fish names need equal prominence, with artificial colour declared. Neither the trade name Beluga nor a CITES registration substitutes for the applicable food-labelling and wildlife requirements.
