Black River Caviar is a brand associated with Esturiones del Rio Negro S.A., a Uruguayan sturgeon producer documented at Baygorria on the Río Negro. Its current species description identifies Russian sturgeon, Acipenser gueldenstaedtii, marketed as Russian Oscietra; the brand name should not be confused with a separately incorporated former US distributor.

Who stands behind Black River Caviar
Canada's trademark register identifies Esturiones Del Rio Negro S.A. as the registered owner of BLACK RIVER CAVIAR. Canada's trademark register lists Esturiones Del Rio Negro S.A. as the registered owner of BLACK RIVER CAVIAR, registration TMA1258621, registered on 24 September 2024. Its recorded address is Of. 102, Tomás Basañez 1211, Montevideo, Uruguay.
A 2021 WIPO domain-name decision records a change of ownership in 2018, but does not identify a present parent company.
The same WIPO decision distinguishes the producer from Black River Caviar, Inc. in the United States, formerly Southern Star Imports Inc. It describes a distribution relationship beginning in 2008 and a subsequent dispute. This is useful identification evidence, not a reason to treat every American business bearing the name as the Uruguayan farm or its subsidiary.
Founding and the farm at Baygorria
The company's Spanish-language history dates Walter Alcalde's initiative to 1990. Its English-language story describes it as the first Southern Hemisphere caviar farm.
The location has stronger independent documentation. Uruguay's Presidency recorded a visit to the sturgeon operation at Baygorria, in the department of Durazno, on the Río Negro, in 2015. This places the farming operation in Uruguay independently of the brand's promotional material and supports its inclusion in Uruguayan caviar.
Keep the farm address separate from the business address. The CITES entry gives a Montevideo contact at Rambla 25 de agosto de 1825, No 410, whereas the Canadian trademark record gives Tomás Basañez 1211. Those are addresses recorded for different administrative purposes; neither relocates the fish to the capital.
Water, system and environmental claims
Black River describes a river-fed raceway system: channels through which fresh Río Negro water passes, rather than a closed recirculating system. Its explanation centres on continuous water movement and the opportunity for fish to swim against a current. These are the producer's descriptions of its husbandry, not an independently audited engineering assessment.
The company also uses environmental language about its water and calls its farming sustainable. A connoisseur can recognise the relevance of water management without accepting those words as a complete environmental assessment. Useful supporting evidence would include discharge monitoring, escape prevention, feed sourcing and any independent certification covering this particular facility.
There is a useful distinction here between a farming method and a marketing comparison. Flowing river water describes part of the system; it does not by itself demonstrate better welfare, lower impacts or a particular flavour. Those conclusions need their own evidence, rather than following automatically from a photograph of moving water.
Species and the meaning of Oscietra
The company's species page identifies its Russian Oscietra as Acipenser gueldenstaedtii. Here, Russian describes the sturgeon and Oscietra is the commercial name used for the caviar; neither means the eggs were produced in Russia. The documented farming origin is Uruguay.
Black River's own question-and-answer page describes a business that farms sturgeon, sells its own branded caviar and supplies bulk caviar to other brands. That supports describing it as a producer, rather than simply a repacker.
Here, Russian describes the sturgeon and Oscietra is the commercial name used for the caviar; neither means the eggs were produced in Russia.
For an individual lot, ask for the scientific name and original producer details rather than relying on the front label alone. This is especially useful where a distributor has several product lines: a species statement on a producer's information page should not silently become a specification for every tin handled by another business.
What Black River Caviar is known for
Its clearest distinguishing features are geographical and operational: a documented Uruguayan farm, a river-fed system described by the producer, and an identified Russian sturgeon offering. The interesting comparison with other houses is therefore about provenance and farming, not an assumed flavour associated with a country.
A sensible tasting note should identify the actual lot, its species and who tasted it. For comparisons with businesses that farm, process or source caviar differently, start with caviar houses and producers.
Registration and the export path
The CITES register lists Esturiones del Río Negro S.A. under UY-001, with “Yes” in its exporter and combined processing/repackaging columns. CITES registration identifies a wildlife trade operation; it is separate from EU food establishment approval.
Uruguay's CITES permit procedure is administered through the Ministry of Environment and its biodiversity directorate. Fishery export authorisation is a separate DINARA procedure through the national single window for foreign trade, VUCE. These different controls should not be collapsed into a single claim that the producer is approved everywhere.
The WIPO record documents a historical distribution relationship in the United States; it does not by itself establish the details of individual shipments. Uruguay XXI's exporter directory also identifies the Uruguayan entity as an exporter. Country-wide destination lists, however, cannot establish that this particular producer supplied every market receiving Uruguayan caviar.
Market access is not the same as an export record
European Commission guidance requires both an eligible country and an appropriately listed establishment for relevant animal-origin food imports. A 2022 amendment explicitly listed Uruguay for aquaculture finfish and caviar, but that historical country entry is not sufficient evidence of the producer's current establishment approval.
| Jurisdiction | What the evidence establishes | Source and check |
|---|---|---|
| EU | Country and establishment listing are separate checks. According to official guidance, country and establishment approval require separate checks. | European Commission listing guidance; November 2026. |
| Great Britain | Current country eligibility, establishment status and applicable wildlife-trade conditions require route-specific verification; no clearance claim is made here. | Defra fish import guidance; November 2026. |
| Northern Ireland | Do not assume a Great Britain import assessment establishes the position for Northern Ireland. | FSA guidance; November 2026. |
| United States | According to USFWS, a conditional CITES exemption covers up to 125 g in personal luggage. | 50 CFR 23.71, current eCFR; November 2026. |
For a shipment, use importing, exporting and re-exporting caviar alongside the destination authority's current instructions. A documented past commercial relationship is evidence of trade, not a permanent entitlement to import.
Origin, processing and importer repacking
Read the producer identity and any importer or repacker identity as different information. The CITES registration connects UY-001 with the Uruguayan company, but the contact address on an importer-branded tin cannot independently establish where its roe was farmed.
When a supplier says that its caviar comes from Black River, ask it to identify the original producer, species, country of origin and any subsequent repacking operation. Match the physical label with the lot documentation rather than using the brand name as a substitute for traceability. A label is a traceability tool, not independent proof of the contents.
The distinction is explained further in country of origin versus country of repacking. To check whether an operation's name and code match the public record, use how to check a caviar producer on the CITES register.
