Who owns Caviar House & Prunier?

The clearest dated ownership statement is OLMA's announcement of 15 July 2021. It says OLMA Luxury Holdings purchased a majority stake in Caviar House & Prunier Group from Jean-Francis Bretelle, following the deaths of Pierre Bergé and Yves Saint Laurent.

As of November 2026, OLMA continues to present Caviar House & Prunier among its holdings.

Swiss official merger notices identify Caviar House & Prunier Holding SA, CHE-370.328.737, at Rue du Rhône 30, Geneva, as the receiving company in a 2026 merger with ALMAS CHP SA. This is a legal entity, not simply another spelling of the brand; the notice does not disclose its shareholders.

The Prunier name, farm and restaurant

The companies trace Prunier to a Paris restaurant founded in 1872 and Caviar House to Copenhagen in 1950. Their combined group dates from the 2004 merger, according to OLMA's announcement; none of these dates is the incorporation date of every present operating subsidiary.

The farming strand has its own chronology. In a February 2024 company interview, Laurent Sabeau dates the start of the Montpon-Ménestérol venture with his wife Valérie to 1990; the French company record gives PRUNIER MANUFACTURE a creation date of 1 August 1991.

The Paris restaurant must now be treated separately. A BODACC sale notice published on 17 October 2025 names PRVH - PRUNIER RESTAURANT VICTOR HUGO, SIREN 989008289, as the new owner of the restaurant business previously operated by PRUNIER; the documented transfer concerns the restaurant, not the Dordogne farm.

Consequently, an older group description listing the restaurant as part of its estate is not enough to establish current common ownership. Nor does a restaurant serving Maison Prunier caviar demonstrate ownership of the producer: the restaurant's 2026 menu documents supply, which is a different relationship.

What the Prunier farm produces

Prunier Manufacture is at Montpon-Ménestérol, on the Isle in Dordogne. The regional producers' association identifies the site and its river supply, while the company's own account describes its farming and caviar preparation there; this is production in France, not merely French repacking of imported roe.

Two species are documented in Prunier's published material. Its Baeri range is identified as Siberian sturgeon, Acipenser baerii, raised in Aquitaine; a 2022 Prunier press dossier also describes Russian sturgeon, Acipenser gueldenstaedtii, being raised in the Montpon-Ménestérol ponds for its Oscietra range.

According to Prunier’s November 2022 dossier, Russian sturgeon were being raised at Montpon-Ménestérol. For the biology behind the first species, see siberian sturgeon caviar; the wider national context belongs in french caviar, rather than being inferred from one producer.

Prunier's claim that its manufacture produces all its caviars refers to the Prunier strand. Caviar House separately describes itself as a selector working with partner farms, and names France, Bulgaria and Asian farming regions among its sources; a single French farm should not be credited with that entire selection.

Names such as Imperial and Tradition describe selections or preparations, not additional species. Beluga refers to the species listed by CITES as Huso huso. Kaluga means the species CITES lists as Huso dauricus; commercial descriptions may also refer to hybrids. According to Caviar House, its partner farms include producers in France, Bulgaria and Asia.

Does Prunier use the Aquitaine PGI?

The company's current FAQ says all its Prunier Baeri caviars are certified Caviar d'Aquitaine. The regional association lists Prunier Manufacture among its producers.

The EU registration instrument is Implementing Regulation (EU) 2025/342, published on 18 February 2025 and in force from 10 March 2025. The specification covers only unovulated eggs of Acipenser baerii baerii, so Prunier Oscietra is not covered simply because it comes from the same producer.

The registered specification permits fresh, pasteurised and deep-frozen product. According to the specification, sturgeons are slaughtered and primary packaging is completed within four hours; the separate caviar d'aquitaine pgi guide explains the scheme beyond this house.

Airport retail and the British insolvency

The relevant insolvent company is CAVIAR HOUSE AIRPORT PREMIUM (UK) LIMITED, company number 01787390, not the international group as a whole. The Gazette records the appointment of administrators Ken Touhey and Marco Piacquadio on 6 September 2024; that notice concerns a specific British operating business.

The filing history lists a notice of movement from administration to creditors' voluntary liquidation filed on 11 September 2026. As of November 2026, Companies House records the company as being in liquidation.

An April 2026 administrators' progress report is also listed in that history.

The London website identifies a different company, CHP UK CITY LIMITED, number 10832834, at 161 Piccadilly. Its legal notice also identifies the French copublisher at 20 avenue Victor Hugo, Paris; shared branding does not make the London city business identical to the airport insolvency company.

What it is known for

The distinguishing feature is the combination of a French production strand and an international selection business. Prunier presents farming, hand salting and maturation as central to its identity, while Caviar House presents comparison and selection across partner farms as its expertise; these are attributed descriptions, not independent product tastings.

Airport service is another longstanding part of Caviar House's account of itself. The company dates its first Geneva airport boutique to 1968 and its first Heathrow Seafood Bar to 1984; those historical claims do not establish which concessions are trading today, or which entity holds them.

Reading origin and registration correctly

The public CITES records list Prunier Manufacture at Montpon-Ménestérol, Prunier at 16 avenue Victor Hugo in Paris, and Caviar House & Prunier (Suisse) SA at a Geneva airport address. These are facility records for wildlife-trade traceability, not a consolidated ownership chart or a register of every shop.

In particular, the Paris entry should not be used to decide who owns the restaurant after its sale. Register addresses also differ from some current corporate addresses; see how to check a caviar producer on the cites register for the method.

On a repacked tin, the original roe origin and the repacker's details serve different purposes: a Swiss or British business address does not establish Swiss or British farming. Consult country of origin vs country of repacking, and remember that a CITES label supports traceability but does not authenticate the contents.

On a repacked tin, the original roe origin and the repacker's details serve different purposes: a Swiss or British business address does not establish Swiss or British farming.

CITES labelling is implemented through different rules in different jurisdictions. In the EU, Regulation (EC) No 865/2006 implements the wildlife labelling system; in the US, the relevant wildlife rule is 50 CFR 23.71. Caviar marking requirements also apply under UK wildlife trade legislation. Switzerland, the UAE, China, Japan, Russia and Australia have separate implementing rules; any 125 g personal effects exemption depends on the jurisdiction.
