At Bonneville Hatchery in Oregon, the view is through an underwater window; in Wisconsin, it is from riverbanks where wild sturgeon gather to spawn. A booked farm visit can include a caviar tasting. Choose the experience first: seeing fish, learning about their conservation or tasting their roe. One visit may combine these experiences, but do not assume it includes all three.
How places qualify for this guide
A published invitation is the starting point. Places enter the verified table only when their operator, managing agency or official tourism body offers a visit specifically involving sturgeon or caviar. A farm photograph, shop address or account of a private industry visit does not establish public access.
All access information below was checked in November 2026. For the wider planning framework, start with caviar travel.
Caviar travel in North America: verified places
Choose by experience, not by rank. These destinations offer very different encounters with sturgeon; the table sets out published access, and the sections below explain what to confirm before travelling.

|---|---|---|---|---|
| Marshallberg Farm | North Carolina | Scheduled farm tour and caviar tasting | Marshallberg Farm | November 2026 |
| Tsar Nicoulai | California | Farm tour and dinner on announced dates | Tsar Nicoulai | November 2026 |
| Acadian Sturgeon and Caviar | New Brunswick | Facility tours, educational tastings and seasonal river experience | Acadian Sturgeon and Caviar | November 2026 |
| Bonneville Hatchery | Oregon | Sturgeon pond and underwater window | Oregon Department of Fish and Wildlife | November 2026 |
| Nechako White Sturgeon Conservation Centre | British Columbia | Guided hatchery tours by appointment | Freshwater Fisheries Society of BC | November 2026 |

Which caviar farms accept visitors?
Marshallberg Farm offers scheduled tours and tastings at Smyrna, North Carolina. This is the site to plan for, not Lenoir. Individual and custom tours are excluded under its published conditions, so build the journey around a confirmed event. The booking calendar contains inconsistent year references: get the exact date in writing before setting off.
Tsar Nicoulai says it opens its farm to the public twice a year for a tour followed by dinner. Its description takes in fish tanks, sturgeon and the smokehouse. To turn that outline into an itinerary, ask for the event date and meeting location before making other reservations; the general information page does not confirm a particular departure.
At Acadian Sturgeon and Caviar, the published choices span facility visits, tastings and a river experience involving commercial and scientific fishing. Tourism New Brunswick lists guided visits to its aquaculture and processing facilities and tastings alongside the river experience. The company places its Sturgeon & Caviar Safari in July. A listing marked open year round does not mean the boat experience operates every month.
Sterling Caviar says its farm does not currently offer tours.
Public access is a separate question from who owns a farm or how it developed. For ownership and production history, see California and Pacific Northwest caviar and Canadian caviar. For practical questions to send an organiser, use visiting caviar farms.
Public hatcheries and viewing centres
An underwater window brings a different perspective to the sturgeon pond at Bonneville Hatchery; an outdoor viewing platform offers another. Near Cascade Locks in Oregon, this public fish viewing destination has year round access and an accessible route, according to the state wildlife agency. Come to see sturgeon, rather than caviar production.
Pallid sturgeon and paddlefish are among the featured species at Gavins Point National Fish Hatchery, near Yankton, South Dakota. Visitors can explore an aquarium and visit the hatchery. The aquarium's published schedule closes it from October through March, while outdoor areas remain open throughout the year. Before travelling, especially outside summer, ask which fish and indoor areas will be accessible on your date.
Recovery work is the focus at the Nechako White Sturgeon Conservation Centre in Vanderhoof, British Columbia. It publishes guided hatchery tours by appointment for autumn and winter 2026 to 2027. Biosecurity restrictions can move tours outside the building, its visitor notice explains, so expect an introduction to conservation rather than unrestricted access to the rearing areas.
Spring spawning and winter traditions
For Wisconsin's spring spawning, plan around Wisconsin DNR's live reports rather than an old festival calendar. The agency identifies Bamboo Bend at Shiocton, the Wolf River Sturgeon Trail near New London and other public observation points. Its 2026 updates show why current reports matter: high water can alter access and make fish harder to see.
Spring means watching from designated banks; the Winnebago System's winter spearing tradition turns attention to ice and regulated harvest.
Stay on designated banks and paths, and leave the fish undisturbed. A spawning run is an opportunity to watch wildlife, not permission to fish. For the biology behind the gathering, read about lake sturgeon.
Spring means watching from designated banks; the Winnebago System's winter spearing tradition turns attention to ice and regulated harvest. Its 2026 season opened on 14 February, with licences, tags, registration requirements and harvest caps. That is a past season date, not a current opening. Spectators should arrange access with a host and follow local ice advice. The DNR does not monitor ice conditions.
Fishing is a separate planning task
A fishing trip needs its own checks, even when a guide is handling the outing. British Columbia's April 2026 guidance requires both a basic freshwater fishing licence and a White Sturgeon Conservation Licence for the specified Fraser River watershed reach from the CPR Bridge at Mission to and including Williams Lake River. White sturgeon fishing in that reach is catch and release only. Check the precise water, date and closure notices before booking; the Fraser system is not one unrestricted fishery.
Wisconsin's 2026 hook and line season ran from 5 to 30 September on specified waters. Harvest required a general fishing licence and sturgeon tag. For release fishing during the open season, the agency said a sturgeon tag was unnecessary. Targeting sturgeon outside open waters remained unlawful even with release intended, so check the water's rules as well as the guide's availability.
Missouri paddlefish require a different approach again. The published general 2026 season ran from 15 March to 30 April, with different restrictions on particular waters. Mandatory retention applies in some circumstances: do not assume catch and release is an option. Before arranging snagging, check the current permits, size limits and retention requirements for the particular water. Missouri also prohibits possessing extracted paddlefish eggs on its waters or adjacent banks, transporting those eggs, or selling them.
Indigenous visits should follow the host's invitation
Sasq'ets Journeys publishes Sts'ailes guided activities in British Columbia, including Harrison River kayaking with stories and teachings. The operator describes river experiences that combine paddling or boat travel with Sts'ailes stories and teachings. Ask the host which activities are currently offered, then follow their guidance on photography and participation.
The invitation matters. Community fishing, a ceremony or a restoration project should not be treated as a public attraction without one. Indigenous sturgeon traditions provides context; the community's own visitor information should shape the itinerary and establish what guests are welcome to join.
Carrying caviar across the US and Canada border
The US and Canada set different personal caviar exemptions. For US entry or departure, the personal effects exemption allows no more than 125 g (about 4.4 oz) per person of qualifying Appendix II caviar, in containers bearing the required CITES labels. Carry more, and permits must cover the entire quantity, not just the excess. The exemption applies to qualifying accompanying baggage, not generally to mailed orders. Check both countries' current conditions for your journey.
Canada's Wild Animal and Plant Trade Regulations, section 16, set a higher threshold: 250 g (about 8.8 oz) for the sturgeon caviar personal effects exemption, subject to the regulations' conditions. Canadian food inspection guidance repeats that figure. Crossing between Canada and the US still means meeting the US rules, so Canada's allowance cannot justify taking more through the US border.
Keep the original labelled containers and purchase documentation. Declare caviar as food to CBP when entering the US and to CBSA when entering Canada, and check admissibility for the actual species before travelling. Quantity is only part of the question: a personal allowance does not override US endangered species restrictions.
Those US restrictions include a suspension of imports of beluga caviar originating in the Caspian and Black Sea basins, although separate exemptions may apply in specified circumstances. USFWS warns that beluga caviar cannot be imported under the ordinary traveller allowance.
Before committing to the journey
Get the essentials in writing: date, meeting address, public access, and whether the booking includes fish viewing, tasting or both. Ask about mobility access, children's participation and restrictions on entering production buildings.
Before booking a river outing, confirm the weather cancellation arrangements and exactly what the experience involves. Know whether fish will be watched, studied or harvested.
