At Le Teich in France, Perlita advertises a 90 minute visit that takes you through sturgeon rearing before the tasting. The fish come first, then the roe. That sequence is the appeal of visiting a caviar farm: a chance to learn how sturgeon are reared and caviar is produced.
Caviar de Neuvic and Caviar Perlita in France, Calvisius in Italy and Riofrío in Spain all advertise public farm visits. Choose a tour with a tasting or a longer experience built around a meal, then confirm the route before booking.
How these farms were selected
Each farm included here has its own sturgeon and advertised public visits in official material checked in November 2026. Inclusion is unpaid and the table is not ranked. A tasting room or shop alone does not qualify.
Book through the producer's official visitor page or contact team: a published programme does not guarantee availability on your chosen date. For the wider itinerary, see caviar travel.

France: Dordogne and the Arcachon basin
The French route runs through Nouvelle-Aquitaine, from the inland Dordogne and Isle valleys towards the Arcachon basin in Gironde. These visitor stops sit within a broader farming landscape: the protected Aquitaine production area extends beyond them, as french caviar explains.
Caviar de Neuvic
At Neuvic, the estate and its sturgeon farm lead into the tasting. The visitor website offers Discovery, Initiation and Master Class formats. Choose the introductory option for an explanation of farming; before committing to a longer format, ask what extra tasting teaching it includes.
The regional tourism board lists guided visits by appointment, with French and English among the spoken languages. Dordogne tourism describes the estate as open throughout the year. Confirm your date and tour language with the reservations team, since shop opening hours are not tour departure times.
There is scope for a fuller food day here. The Dordogne tourism body's producer guide lists the nearby Moulin de la Veyssière, where walnut and hazelnut oils offer another view of local production. Neuvic's own visitor site also advertises meals featuring sturgeon. Reserve the meal separately unless your chosen visit includes it.
Perlita at Le Teich
Perlita offers the coastal alternative to an inland Dordogne visit. Its published farm material describes a tour of sturgeon rearing followed by a tasting. This is a different setting for the itinerary, not another tasting address in the same village.
Plan around the season. Le Teich's tourist office places visits between April and October and describes small weekday groups visiting by reservation. With this guide checked in November 2026, plan for the following visiting season rather than immediate November access. Confirm the next available dates through Perlita's own reservation channel before arranging the journey.
Italy: Lombardy and Veneto
Calvisano in Lombardy, near Brescia, is the verified Italian stop, with a visitor programme run by Calvisius. To place it within Italy's wider production geography, see italian caviar, which covers more than farms admitting visitors.
Calvisius at Calvisano
Choose between a guided tasting and lunch: both main Calvisius visit formats begin with a farm tour. The current Experience page also includes a video about caviar processing. A production explanation does not guarantee admission to a working processing room; ask specifically about access if that matters to you.
Allow at least ten days' notice, as requested by the official booking page. Italian and English are listed, with French subject to availability. Tasting visits are advertised from Monday to Sunday; lunch visits are advertised from Monday to Saturday. Confirm the departure time directly, because different parts of the page give inconsistent times.
For a longer regional food itinerary, Calvisius's visitor brochure names restaurant partners in Brescia, Franciacorta and around Lake Garda. These are the producer's suggestions, rather than independently assessed recommendations. Read the producer's background for a fuller account of Calvisius.
Spain: Riofrío in Andalusia
At Riofrío, the visit puts sturgeon rearing alongside the story of caviar production. The producer's website describes the farm and advertises public visits in Loja, in Granada province. This is an Andalusian stop; spanish caviar sets it within the wider national farming picture.
The fish are as much a reason to come as the finished roe. Riofrío presents its visit as an explanation of both rearing and production, and directs visitors to its official Visits section. An official Osborne experience page also advertises a guided visit and tasting.
Several guided visit and tasting formats are advertised. Before arranging transport, ask for the differences between them, the meeting point and exactly what your chosen tasting includes.
Nearby, local restaurant group Riofrío Restauración describes cooking centred on trout, sturgeon and caviar alongside traditional dishes. That description comes from the group itself. For the producer's background, separate from the practicalities of visiting, see riofrío.
Other profiled producers: confirm access first
A restaurant event, a professional invitation or a photograph of visitors does not establish routine public farm access. Before making a detour to another producer, get written confirmation through its official contact channel.
What to look for in the farm shop
Start with two questions: which species produced this roe, and where did this particular batch originate? A brand name is not a species name. Nor does visiting a farm in France, Italy or Spain establish the origin of everything offered in its shop.
Look for the CITES label on the primary container in all three countries. Ask the guide to explain the label on the container in front of you. It supplies traceability information, although it cannot independently verify the contents.
In Aquitaine, look beyond regional wording to the protected name Caviar d'Aquitaine and its PGI mark. The EU registration regulation was published on 18 February 2025. INAO specifies Siberian sturgeon, Acipenser baerii, for the protected product; not every caviar encountered in the region qualifies.
Taking caviar onwards
Keep the original labelled containers and evidence of lawful purchase when travelling between France, Italy and Spain. Arrange cold transport according to the producer's instructions.
For onward journeys, check destination wildlife, customs and food rules, including those for Britain, Northern Ireland, Switzerland, the US, UAE, China, Japan, Russia and Australia.
According to US Fish and Wildlife Service guidance, travellers may carry up to 125 g of eligible Appendix II caviar for personal use in accompanying baggage, in individually CITES labelled containers. USFWS excludes beluga caviar from the US personal allowance; it needs ESA authorisation.
Before booking, use visiting caviar farms to settle the remaining questions about your visit.
