Caviar production is spread across farms in many countries, but the companies selling it do not all perform the same job. Some groups breed sturgeon and process their own roe; others source finished caviar, repack it, distribute it or sell it under a brand. A useful corporate map therefore separates farming scale, commercial reach and ownership.

Which major caviar producers belong in a corporate map?

This is a selected overview of businesses with documented operations and identifiable corporate records, not a complete global league table. It does not establish which companies produce or sell most of the world's caviar. Significant producers or distributors may be absent where equivalent evidence was not available. For the wider commercial setting, start with the industry overview or explore the caviar industry hub.

Production, processing capacity and sales volume measure different things. A company can sell stock made in an earlier year or caviar bought from another producer, while a processor can handle fish it did not breed. Do not add these figures together or treat every branded tin as additional farm output.

How to judge a company's role

A farmer raises the fish; a processor prepares the roe as caviar; a repacker transfers caviar into new primary containers. Distributors supply other businesses, while retailers supply the final customer. A brand identifies the commercial offering, not necessarily the farm, and one legal entity may perform several of these roles.

For each business, ask whether its caviar comes from its own fish, another farm within the group or an outside supplier. Then identify the company that processes or repacks the particular consignment. The distinction is explained in farmers, processors and brands, rather than inferred from a company's marketing name.

Company and ownership overview

The table distinguishes a documented ownership event from a verified current shareholding. “ Origins refer to the production described below, not every product a group might sell.

The companies behind the names

Kaluga Queen

Kaluga Queen is the brand of Hangzhou Qiandaohu Xunlong Sci-tech Co., Ltd. Its June 2026 prospectus identifies Quzhou, Zhejiang, as headquarters and describes integrated breeding, aquaculture, processing and sales in China. Documented bases include Quzhou and Qiandao Lake in Zhejiang, alongside operations in other provinces.

The June 2026 prospectus identifies Wang Bin and associated holding vehicles as the single largest shareholder group at the time of that disclosure. It documents hybrid, Russian, Kaluga, beluga, Amur and Siberian sturgeon stocks. Its commissioned CIC market study estimates a 36.1% share of global caviar sales volume in 2025: an attributed market estimate, not an independently established census.

Calvisius and Agroittica Lombarda

Calvisius is a brand of Agroittica Lombarda S.p.A., based in Calvisano, Brescia, Italy. The company's history connects its own farming and caviar processing with white sturgeon, Acipenser transmontanus, and distinguishes Calvisius from Ars Italica Calvisius, developed through Italian Caviar S.r.l. and farms in the Ticino park area.

According to Feralpi's 2022 consolidated report, Feralpi Farm held a 45.46% interest in Agroittica Lombarda. These are Italian production operations, not evidence that every commercial entity using the brands is itself a farmer. See the Calvisius group profile for the relationship between the production companies and brands.

Antonius Caviar

Antonius Caviar belongs to the production network centred on Gospodarstwo Rybackie “Gosławice” sp. z o.o., headquartered in Konin, Poland. Its farm history documents Siberian sturgeon, Acipenser baerii, and Russian sturgeon, Acipenser gueldenstaedtii, and says Gosławice acquired a majority stake in Gospodarstwo Rybackie Olsztyn II in Ruś in 2012.

The US site's terms identify AC Northam LLC in Sunrise, Florida, as seller and Olsztyn II in Poland as producer. They also state the producer's caviar registration number as 0009. According to the US site's terms, Olsztyn II in Poland produces the caviar; the American address belongs to the seller.

Caviar House & Prunier

According to the Swiss register, Caviar House & Prunier Holding SA absorbed Group SA in December 2025; Prunier Manufacture is the French production business. A Prunier product specification names Montpon-Ménestérol as the place where its Siberian sturgeon caviar is raised, processed and dispatched, with France as origin.

OLMA Luxury Holdings announced its majority acquisition on 15 July 2021. This supports a dated ownership event, not an unqualified statement about the complete November 2026 group structure. According to the Swiss register, Holding SA's registered office is Rue du Rhône 30, Geneva. This is separate from Prunier's French production location.

Tsar Nicoulai and Sterling

Tsar Nicoulai lists its headquarters in Concord, California. Sterling's corporate history names farming locations at Elverta, Wilton, Elk Grove and Ione in California, and says its farms came under unified ownership and management with Tsar Nicoulai in 2024. These are farming and processing businesses, rather than merely two labels attached to unrelated imported caviar.

According to Sterling's corporate history, the businesses merged in September 2024. The distinction belongs in the shared ownership profile, rather than being flattened into a definitive transaction date.

Ownership changes are entity-specific

The British airport insolvency is verifiable, but it must be attached to the correct company. The London Gazette records the appointment of administrators to Caviar House Airport Premium (UK) Limited, company number 01787390, on 6 September 2024. That is not a finding that Prunier Manufacture or the entire Swiss group entered administration.

For consolidation research, distinguish a share purchase, an asset purchase, common management and a commercial merger announcement. They can produce similar branding while leaving different companies, liabilities and farm assets behind. Record the announcing party, announcement date and effective date separately, and identify which assets or subsidiaries the transaction actually covers.

Traceability is not corporate ownership

A company register establishes a legal entity and whatever ownership information that jurisdiction publishes. The CITES register serves a different purpose: identifying registered caviar exporters and processing or repackaging operations. It is not a comprehensive register of brand owners, retailers or ultimate shareholders, so absence of a retail name is not proof that the business is unlawful.

A CITES label provides traceability information; it does not, by itself, prove what is in the container.

CITES publishes country registers identifying licensed exporters and registered processing or repackaging operations. For a consignment, match the registered plant to the responsible legal entity and preserve the underlying paperwork. A CITES label provides traceability information; it does not, by itself, prove what is in the container.

Headquarters, brand nationality, processing location and roe origin are separate facts. US wildlife rules explicitly distinguish the country of origin from the repackaging plant's details, including its country where different. For professional reporting, name the farm or source country only where the product documentation supports it, and avoid turning a company's address into a statement about its entire supply chain.

What the available figures can establish

A defensible company comparison needs the same reporting year, the same unit and the same business boundary. Ask whether a number covers one farm, all consolidated subsidiaries, contract processing or branded sales. If those boundaries differ, describe the businesses side by side instead of assigning positions in a league table.

For an ownership note, preserve the distinction between the latest document retrieved and the date it describes. Checking an old announcement in November 2026 does not make its ownership information current.
