Calvisius is the caviar brand presented by Agroittica Lombarda, the farming and processing business based in Calvisano, northern Italy. Its wider offering also includes Ars Italica Calvisius, associated with production in the Ticino park, so brand, operating company and farm location should not be treated as interchangeable.

How Calvisius and Agroittica Lombarda fit together

Agroittica is not simply an Italian address on a distributor’s tin. Its own history describes fish farming, reproduction and caviar production, while the CITES register identifies a Calvisano processing/repackaging operation. Calvisius is the consumer-facing name within that productive business, rather than the name of a separate farm. The distinction matters when comparing caviar houses and producers.

The company also identifies Italian Caviar Srl as a participated company involved in Ars Italica Calvisius. That wording establishes an association, not a complete ownership chart: Italian Caviar Srl, Storione Ticino and Agroittica should not be collapsed into one legal entity.

Feralpi’s published accounts document a historical shareholding. Feralpi Holding’s consolidated accounts for 2022 record a 45.46% interest held through Feralpi Farm Srl. That figure describes the holding reported for 2022; Feralpi’s 2024 accounts state that Feralpi Holding ceased to exist on 27 November 2024 following a complete demerger.

Where the fish are farmed and processed

Feralpi’s 2022 accounts name two Calvisano sites, Viadana and Ca’ Nove. The company’s contact address is Via John Kennedy in Calvisano; an office address is not itself evidence of a registered plant.

Agroittica’s history dates the creation of Storione Ticino Soc. Agr. s.s. to 2007, describing collaboration with the Giovannini and Mandelli families at an existing farm in the Lombard Ticino park. Its brand history dates the Ars Italica project to 2008. The associated farm is therefore not simply another name for the Calvisano site.

Agroittica describes control of the production chain “from egg to egg”, and reports successful reproduction of farmed white sturgeon in 1992.

The company places its early white-sturgeon work within a collaboration with the University of California, Davis. Its history says imports of larvae continued until 1997 to broaden the stock’s genetic diversity. That is a more specific account than simply calling the business vertically integrated: it describes how its breeding population developed.

Which species the names refer to

The company associates Tradition with white sturgeon, Acipenser transmontanus, Ars Italica Oscietra with Russian sturgeon, Acipenser gueldenstaedtii, and Ars Italica Da Vinci with Adriatic sturgeon, Acipenser naccarii. The company also lists Siberian, Beluga and Sevruga alongside these three lines.

These are species mappings, not interchangeable quality grades. Royal, Elite, Classic and Imperial describe the house’s selections; they are not additional species or universal legal grades. For the fish behind the original line, see white sturgeon caviar; for the Ticino-linked native species, see Adriatic sturgeon caviar.

According to Calvisius, Essentia is white sturgeon caviar treated by cold smoking, not a separate species.

Water, husbandry and the own-production claim

The farming account is unusually specific about the original industrial connection. Agroittica says the project began in 1972 with the idea of recovering residual heat from a neighbouring steelworks through a heat exchanger, using water emerging from the aquifer at Calvisano. This describes heat transfer, not fish being raised in steelworks process water.

Today, its farming page says it uses water that rises directly within the property and manages the full reproductive chain.

Agroittica says the project began in 1972 with the idea of recovering residual heat from a neighbouring steelworks through a heat exchanger, using water emerging from the aquifer at Calvisano.

Calvisius states that its caviar is produced entirely within its own facilities. Read that as a company provenance claim covering a network that includes associated operations, not as independently audited proof that every fish belonged throughout its life to one wholly owned company. For wider national context, Italian caviar separates the country’s production history from an individual producer’s account.

What it is known for

Calvisius is particularly associated with white sturgeon and the Tradition line, rather than with a single Caspian species. Its documented history links that development to Gino Ravagnan and Serge Doroshov in 1981, followed by the introduction of Tradition in 1992. These dates come from the company’s retrospective account.

The wider business also documents Cavalier Caviar Club, introduced in 2014 for organised retail distribution, alongside Ars Italica. That is evidence of other house brands, not a licence to identify unnamed retailers’ caviar as Agroittica production.

Descriptions such as “largest” and “sustainable” occur in company material, but they answer different questions. A scale claim needs a dated comparison; an environmental claim needs stated measures and a defined scope. Neither should substitute for identifying the species, origin and processor of the particular caviar.

How labels show origin, processing and repacking

The CITES register lists Agroittica Lombarda at Via Kennedy, Calvisano, under codes 384 / IT0004, as an exporter and processing or repackaging operation. A registered operation is not the same as every farm, retail outlet or brand in a group.

On caviar labels, the country of origin and the processing or repacking operation answer separate questions. Italian origin does not become American origin because a US business repacks the caviar, and a Calvisius brand name alone does not identify the facility that last handled it. A company brochure filed in a US federal rulemaking docket illustrates this distinction by identifying Italian origin and repacking by Calvisius USA in Fairfield, New Jersey.

Wildlife traceability and consumer food information are separate requirements. UK wildlife trade rules require individual, non-reusable labels on primary caviar containers; these requirements are separate from consumer food information rules.

A CITES label supplies traceability information; it is not analytical proof of the tin’s contents. Match the registered operation to the label using the CITES register guide, and distinguish a named brand from the actual packer with the private-label caviar guide.

For a particular batch, ask the supplier to confirm the scientific species, origin country, processing establishment and any later repacker. If the answer names only Calvisius, it has identified the brand, not completed the provenance record. Where documentation links those stages, the relationship between the Italian farm, processor and overseas seller becomes much clearer.
